If your CDs are showing up with the generic Audio CD naming, it means your Mac is having difficulty connecting to the database where unique CD names and track information can be accessed. Sometimes restarting helps.
Or, if you're actually ripping from Audio CDs that were burned, all with the name 'Audio CD', since Audiobook Builder will keep them in the order they were ripped in, perhaps you could do a batch rename to accomplish the Disc numbering. To do that, supposing your Discs are retained each as a Chapter, select them all, choose 'Rename...' from the Audiobook menu, and enter in your preferred naming/numbering scheme. To achieve your suggested "Disc 1, Disc 2, etc." scheme, type the word "Disc" into the field and drag the blue 'Chapter #' Element in to the right of that.
Hopefully for now that'll get you going. We can look into the auto-naming too, though.
