A chapter is the only unit allowed within an audiobook file and you cannot have subchapters within a chapter. One layer of Chapter breaks are all the current audiobook file format understands.
The best that can be done is to make each track a chapter (using the split button) if you still want them able to be navigated between, and then mark the movement as part of the chapter name, or forego the tracks and use chapters to mark the movements by joining each movement into a single chapter. You can also use part lengths to create separate part files within the same audiobook, but you will not have exact control over where the parts are divided. Part division is based on time and not between specific chapters.
