The size of the 'Entry Font' can be changed in Preferences/General, but this only changes the font size of entries themselves. Is it possible to change other font sizes such as those in the accounts list or the toolbar?

Text found outside the register view area is sized based on System Font settings. If you’d like to increase the System Font size used across the board, which will also change the look of other apps on your Mac, go up to click the Apple menu at the top of the screen, select the System Preferences menu item, click the Display button, select the Scaled option and choose from the various options next to where it says “Larger Text” until things are sized how you like.

I don't get that option. I'm using a Late 2014 mac mini with macOS 11.1 and an HP v24i monitor via HDMI.

The preferences will only let me select one of the screen resolutions, but I want to keep the default resolution to retain the desktop area, and just increase the font size.

The referenced scaling options aren't available because you're using an older version of macOS. So, unfortunately, it won't be possible to scale things up so that the System Font increases, as discussed.

macOS Big Sur Version 11.1 is an older version? I know 11.2 is out for testing but I didn't think we needed to be that cutting edge

I think the reason I don't get the scaling options is because I'm using an external monitor rather than an Apple built-in display?

No, you're right, the options look different because of the external display is being used, not because of your OS version—at first glance, it just looked like the older Display options. The situation remains the same, though: you won't be able to use the Larger Text Scaling option with your current setup, unfortunately.
